Chicken and Spinach Meatballs

Meatballs are somewhat of a comfort food for me. There is just something about them that soothes my soul, but of course sometimes it’s best to have white meat for a number of health reasons. Also they make a nice change from the traditional and are quicker to make, which instantly makes them a great Ramadan recipe as you can easily whip them up for iftar.


You will need 

  • 250g of minced chicken
  • 2 handfuls of roughly chopped spinach
  • Panko Breadcrumbs
  • 2 eggs
  • Salt
  • Fresh Basil chopped up
  • A pinch of dried rosemary 
  • Pepper
  • 1 tablespoon of Parmesan cheese (optional)
  • 1 Spring onion chopped into small pieces
  • Garlic paste or minced garlic

Put all your ingredients in a bowl and mix well with your hands. Add more breadcrumbs as needed.

Shape your meatballs into the desired size one by one. 

On a skillet heat up some coconut out and  cook the meatballs on it until ready and browned all over. This should only take about 10-15 minutes.

Once ready you can add your sauce if yo desire or serve them as is.

Personally I like serving them without sauce on a bed of couscous or salad.
