Mini Aubergine Pizzas

As I’m sure I have mentioned before I am a total pizza fiend. And since I love it so much but do no relish the idea of high cholesterol and obesity I have had to find ways of feeding my addiction without actually having pizza. One of these ways is my mini aubergine pizzas. Basically it is pizza toppings but an aubergine slice instead of pizza dough. 

You will need:
About 180g of chopped tomatoes (carton or can)
A few cherry tomatoes diced or cut into small wedges.
Chilli flakes (measure to taste)
2 leaves Fresh basil
Half a teaspoon Dry parsley
2 leaves Fresh Rosemary
Half a teaspoon of Salt
Pepper (measure to taste)
An aubergine
Mozzarella cheese (diced or shredded)
Olive oil

Start by preheating your oven at 180

Slice your aubergine into equal pieces of about 1/2 inch thickness.

Brush some olive oil on both sides and bake them for about 10-15 minutes.

Now for you sauce:

In a small pan heat up some olive oil, add to it you tomato sauce and chilli flakes, next add in your cherry tomatoes.
Season with salt, pepper, rosemary and dry parsley. Let it cook for about 15 minutes.

Add your basil and turn off the heat.

Your aubergines should now be soft, take them out of the oven.

Spoon the sauce on the upside of every slice of aubergine, put them back in the oven and bake for about 10 minutes. Sprinkle your cheese on them and bake until it has melted and the aubergine is soft.

The toppings can be changed to whatever appeals to you, I sometimes like to add spinach and mushrooms.
